Tasting profile

Structure: full-bodied, low tannin, medium acidity, sweet

The Vin Santo of Fattoria I Veroni, a historic estate in the Arno valley at Pontassieve, in Chianti Rùfina. Malvasia Toscana and Trebbiano, with a little Sangiovese, are dried on mats until late winter and slowly pressed. The wine then ages for many years (at least seven, and around nine for the Riserva) in small chestnut and oak caratelli of no more than 100 litres, followed by more than a year in bottle. Amber and about 17% alcohol, it shows toffee, dried fig and apricot, nuts, candied citrus and spice, ending on dark chocolate. Its sweetness is balanced by lively acidity and a gently oxidative bite.
