Tasting profile

Structure: full-bodied, high tannin, medium acidity, dry

Shadrach is the flagship Cabernet of a family who have grown grapes in the Barossa for five generations, made only from selected old-vine parcels and given long French oak maturation. Barossa Cabernet is a different animal from the cool-climate Australian versions — riper, rounder and more chocolatey, with the region's warmth showing in the fruit weight. Blackcurrant and dark plum with cedar, mocha, dried herb and a eucalypt-mint lift. Full-bodied with firm tannin that resolves into velvet over a decade.
