Fox Creek's Vixen, made since 1997, is a McLaren Vale sparkling red of roughly 80% Shiraz with Cabernet Sauvignon and Cabernet Franc. It foams deep purple and smells of raspberry, stewed plum and fruit cake with cinnamon, vanilla and a hint of anise; the palate is generous and rounded, with a touch of sweetness balanced by a firm berry tang and soft tannin. Serve it lightly chilled at Christmas lunch, with glazed ham, roast turkey or barbecued meats.
