Barbera d'Asti Superiore — Piedmont's everyday grape given the serious treatment. Barbera is defined by a combination almost no other red has: very high acidity with very low tannin, which is why it drinks so easily alongside food and why Piedmontese growers plant it on the sites Nebbiolo cannot use. Superiore requires longer ageing before release, usually with oak, so this carries more depth and a rounder texture than a straight Barbera d'Asti. Dark cherry and blackberry with dried violet, a balsamic edge and a savoury leathery note, medium-bodied with juicy acidity and a clean finish. The acidity is the point — it cuts fat and tomato better than almost anything, which is why it belongs with ragù rather than opposite a steak.
