Tasting profile

Structure: full-bodied, high tannin, high acidity, dry

Psi is Peter Sisseck's project to rescue Ribera del Duero's old bush vines. He buys from growers farming ancient parcels that would otherwise be grubbed up, and pays enough to make organic conversion worthwhile. The wine is deliberately lighter-handed than the region's norm, raised in concrete and large old wood rather than new barriques, so the fruit and site show through. Mostly Tempranillo with a little Garnacha: dark cherry and plum over dried herbs, liquorice, violet and a stony mineral edge. It is full-bodied but fresher and more transparent than most Ribera, with firm tannin and the high acidity that the plateau's cold nights bring.
