Buisson Viau — La Grange Tiphaine's moelleux Montlouis, a sweet Chenin carrying around 45 g/l of residual sugar from 80-year-old vines on poor sand and flinty clay over limestone, south-facing. Fermented half in tank and half in barrel over eight months. Pear and quince over acacia honey, white flowers and a saline mineral thread, with the sugar carried lightly rather than cloying — sweet enough for blue cheese, balanced enough for savoury dishes. Farmed organically and biodynamically.
