Cinsault and País from Itata, in Chile's deep south — old dry-farmed bush vines, some of them centuries old, from vineyards planted by Spanish settlers and ignored for generations while the industry chased Cabernet further north. Pale and fragrant: red cherry, cranberry and wild strawberry with a dusty, earthy edge and a faint herbal lift. Light on its feet, low in tannin, high in acidity. Nothing like the Chile most people know, and best served slightly chilled.
