**País** is a red grape long established in Chile, where it was among the first varieties planted by early settlers; it is the same grape known elsewhere as Listán Prieto. **In the glass** — It usually gives a pale, light-bodied red with bright, tart red-fruit flavours, fresh acidity and soft tannins, rustic and juicy in a thirst-quenching way rather than deep or powerful. **Where it grows** — Its stronghold is southern Chile, especially areas like Maule and Itata, where old, dry-farmed bush vines have won new appreciation from winemakers seeking authenticity and lighter styles. The same variety appears as Mission in North America. **At the table** — A friendly match for grilled meats, empanadas and casual, spicy fare. **Cellaring** — Best enjoyed young and fresh, though old-vine bottlings can show surprising depth.
