Tasting profile

Structure: full-bodied, medium tannin, medium acidity, dry

The barrel-aged top cuvée of Château de la Soujeole in the small AOP Malepère near Carcassonne, the most Atlantic-influenced corner of the Languedoc. The estate has been owned by Gérard Bertrand since 2012 and is farmed biodynamically. The blend is Bordeaux-style: mostly Merlot, with Cabernet Franc and a little Malbec. Fermentation finishes in oak, followed by about 18 months in barrel. It is full and structured, with blackcurrant, black cherry and plum, cedar, toast and vanilla. Serve it with cassoulet, duck or lamb.
