Solus Blanc

Tasting profile

Structure: medium-bodied, low tannin, medium acidity, dry

Solus is the white cuvée of Château de Caraguilhes, a biodynamic estate of some 130 hectares set in the garrigue of the Corbières, farmed organically since the 1960s and among the first in France to be certified. Unlike the estate's fresh entry-level white, Solus is raised slowly in demi-muid and clay jar, which gives it breadth and a faintly oxidative, savoury cast rather than overt oak: white peach and quince over fennel, anise and citrus zest, with almond and the dry wild-herb scent of its hillsides. Medium-bodied and textural, with the salinity that marks Corbières whites grown this far from the sea's moderating damp.

Serving: Serve at 10–12 °C.
