Trento DOC is Italy's Alpine traditional-method sparkling denomination, made in the mountain valleys of Trentino from Chardonnay with Pinot Nero and sometimes Pinot Meunier. Altitude is what makes it work: vineyards climb steep slopes to seven hundred metres, and the cold nights preserve an acid line that gives real precision. Cesarini Sforza was founded at Trento in 1974 and is among the denomination's established houses. Expect green apple and pear with white blossom and citrus, a fine persistent bead, and bready, faintly nutty depth from lees ageing — the DOC requires a minimum of fifteen months for the non-vintage. Dry, taut and mineral. Note the record currently files this under France; it is Italian, and a correction has been proposed.
