The two grapes do different jobs: Sauvignon Blanc brings the passionfruit, gooseberry and cut-grass lift, Sémillon the lemony spine and a faintly waxy texture that stops the wine being merely aromatic. Made in stainless steel with no oak to speak of, it is light-bodied, bone dry and high in acidity, with the tropical-and-herbal tension that separates a Margaret River SSB from a Marlborough Sauvignon. Serve it properly cold and drink it young; this is an aperitif and seafood wine, not a cellar proposition.
