Salice Salentino is one of the few appellations anywhere where rosé is taken as seriously as red — the denomination has covered pink wine since it was created in 1976, and Negroamaro, the local black grape whose name means "black bitter", turns out to be superbly suited to it. Cantine De Falco have worked at Novoli, a few kilometres from Lecce in the heart of the Salento, for over half a century, and Stelle di Lorenzo belongs to their Linea Natura. At around 12% this is lighter than most southern Italian rosato, which is the point: expect a vivid cherry-pink, ripe red berries and pomegranate with Negroamaro's characteristic faintly bitter almond twist and a herbal, sun-warmed edge, then a soft, harmonious palate with real freshness and length rather than weight. Dry. Serve properly cold, around 10°C, and treat it as a food wine — grilled fish, tomato dishes, orecchiette, anything from a barbecue.
