Salento Rosato

Tasting profile

Structure: light-bodied, low tannin, medium acidity, dry

Rosato from the Salento, the long limestone peninsula forming the heel of Italy, where pink wine is not an afterthought but a tradition — this is the part of the country that bottled Italy's first commercial rosé in 1943, and the local grapes suit it. Negroamaro above all gives a rosato with more colour, weight and savour than the pale Provençal style: expect a vivid cherry-pink, ripe red berries and pomegranate over a faintly bitter almond twist and a herbal, sun-baked edge. Dry and fuller-bodied than most rosé, with enough substance to hold its own against real food rather than only aperitifs. Serve it cold but not iced, around 10°C, and pour it with grilled fish, tomato-and-mozzarella dishes, orecchiette or anything off a barbecue. Best while its freshness is intact.
