**Cabernet Blanc** is a white PIWI grape, a fungus-resistant crossing developed from Cabernet Sauvignon and hardy hybrid stock. Bred to withstand mildew with little or no spraying, it has become a favourite among organically and sustainably minded growers in northern Europe. **In the glass** — it strongly recalls Sauvignon Blanc, showing gooseberry, blackcurrant leaf, green apple and grassy, tropical notes over crisp acidity and a lively, aromatic palate. **Where it grows** — Germany is a key home, with expanding plantings across Belgium, the Netherlands, Switzerland and other cooler regions where its disease resistance is especially valuable. **At the table** — its zesty aromatics suit goat cheese, salads, asparagus and fresh seafood. **Cellaring** — generally made for early, refreshing drinking, though riper or barrel-aged bottlings can hold for a few years.
