Structure: full-bodied, low tannin, high acidity, dry

Alvarinho this far south is unusual, and Vale da Capucha's Cedro plot sits on clay-limestone barely nine kilometres from the Atlantic at Turcifal, which is what keeps the acidity so firm in a warm region. The winemaking is deliberately slow and hands-off — whole bunches pressed with their stems, wild yeasts, a spell in 500-litre barrels and steel, then two and a half years on fine lees without stirring. The result is a big, textural white rather than an aromatic one: ripe pear and lemon peel, a salted-almond and chamomile depth from the lees, and a chalky, saline finish. Serve it cool but not cold, and treat it like a white for the table.
