Cedro — Vale da Capucha's single-plot white from Torres Vedras, eight kilometres from the Atlantic on clay-limestone laid down when the sea covered this ground. The grape is Alvarinho, known locally as Alvarão: whole-bunch pressed, fermented on indigenous yeasts and aged long on fine lees, giving saline citrus and green orchard fruit over waxy texture and firm, driving acidity.
