Two Hands' flagship Shiraz and the summit of a range built entirely around the variety. Since 2014 it has been 100% Barossa Valley fruit — the McLaren Vale component that used to go into it was spun out as its own single-vineyard bottling — which makes this the estate's clearest statement about what the Barossa can do. Bold and expressive, with a powerful core of black fruit, cedar, mocha and violet over a broad, dense tannic frame. Michael Twelftree's stated ambition is slow development and the ability to grow in the cellar rather than, in his own phrase, Coca-Cola dressed as wine, and the Ares is where that intent shows most. Powerful, but it takes air and time to show its detail — decant it well ahead, and give it something substantial to eat.
