Traditional qvevri Mtsvane from the village of Manavi in Kakheti, fermented and left on its skins for six months in buried clay vessels before a further year of aging in qvevri. The extended skin contact gives an amber colour and a firm, tannic backbone alongside quince, dried apricot and beeswax, finishing dry and savoury.
