Tasting profile

Structure: medium-bodied, low tannin, high acidity, sweet

Eiswein is pressed from grapes frozen on the vine, so only concentrated sugar and acid run from the press. Hans Tschida's estate in Illmitz, on the Neusiedlersee, makes it from Blaufränkisch, a rarity that gives a pale red-to-salmon colour and bright red-fruit character. Expect wild strawberry, raspberry and cranberry with candied cherry, blood orange and honey, intensely sweet but cut by piercing acidity, at very low alcohol. Vivid when young, it keeps for well over a decade.
