Rosé from Xinomavro, the great red variety of northern Greece and one of the most structured grapes anywhere — its name means "acid black", which tells you most of what you need. As a rosé it gives sour cherry, redcurrant and tomato leaf with a dried-herb and olive savour, pale in colour and bone dry. The acidity is fierce and there is a faint tannic grip underneath, which makes this a rosé for the table rather than the pool. Serve cold but not ice-cold.
