M3 takes its name from the three founders — Michael, Martin and Matthew — and comes from the estate's home vineyard in the Adelaide Hills at around 400 metres. The Hills are cool enough to make Chardonnay in the taut, mineral style rather than the ripe tropical one, and this is a reference point for it. White peach and grapefruit with cashew, a fine struck-match reduction and an oatmeal texture from barrel fermentation and lees work. Medium-bodied and dry, restrained rather than buttery, with high acidity giving it both immediate tension and the ability to age.
