Tasting profile

Structure: medium-bodied, low tannin, high acidity, dry

Yarra Valley Chardonnay, from the cool hills east of Melbourne where Australia makes its most restrained expression of the variety. White peach and grapefruit with a struck-match, flinty edge and a nutty note from lees work, oak used sparingly and mostly for texture. Firm acidity gives it a taut line rather than a buttery spread. This is the modern Australian style — closer in spirit to Chablis than to the old oaky Antipodean cliché.
