Tasting profile
Structure: medium-bodied, low tannin, high acidity, dry
Ritual is the organically and biodynamically farmed Casablanca Valley label of Viñedos Veramonte, begun as a project of winemaker Rodrigo Soto with consultant Paul Hobbs. The Chardonnay comes from cool, ocean-influenced vineyards and is fermented with native yeasts, partly in French oak. Lemon curd, white peach and green pear with a light hazelnut note, flinty reduction and a saline, mouth-watering finish: a cool-climate Chardonnay in a restrained, Burgundian vein.
Serving: Serve at 9–11 °C.
