Rudi Bauer was the first winemaker in New Zealand to make traditional-method sparkling wine, and this is the crown of what he built. Quartz Reef farm 30 hectares in Bendigo above New Zealand's largest quartz deposit, Demeter biodynamic and BioGro organic since inception, with roughly three-quarters of production given to méthode traditionnelle. This cuvée is around 93% Chardonnay with a small share of Pinot Noir, hand-picked, bottled the same year and left five years on lees before being riddled and disgorged by hand on site. Citrus and green apple over an irresistible pâtisserie aroma, with clover and honey behind, fine persistent bubbles and a long, chalky finish. Dosage is minimal. The hallmark is acidity — piercing enough to carry the wine for decades and to make it a genuine match for oysters rather than merely an aperitif.
