Maître de Chais Petite Arvine

Tasting profile

Structure: medium-bodied, low tannin, high acidity, dry

Petite Arvine is the Valais's own white grape, grown seriously almost nowhere else in the world, and it is defined by two things: piercing acidity and a distinctly saline finish that Swiss tasters call the goût salin. Expect grapefruit and rhubarb over white flowers and apricot, with a stony mineral core and that salty snap at the close. Maître de Chais is the selection tier at Provins, the large Valais co-operative, so this should carry more concentration and a longer finish than a basic Arvine. Dry, medium-bodied and taut — a wine for river fish and Alpine cheese, and one that keeps far better than its freshness suggests.
