Silenus is Pepper Tree's vintage sparkling, a blend of Chardonnay and Pinot Noir from an early harvest of the company's cool, high-altitude vineyard in Orange, NSW. Chardonnay gives citrus, green apple and white peach, and Pinot Noir adds red-berry depth. A little time on lees brings brioche notes to a crisp, fine-beaded, dry palate. It is ready on release and best within five or six years of the vintage.
