Tasting profile

Structure: medium-bodied, low tannin, high acidity, dry

Lamb Paddock is a single-vineyard Pinot Noir from Pepper Tree's own vineyard on the volcanic slopes of Mt Canobolas in Orange, NSW, at about 800 metres. The cool, high site gives an elegant, fine-boned Pinot: red cherry and rhubarb with subtle herbal notes, refined oak spice and bright acidity. It is attractive on release and gains savoury complexity over five to eight years.

Serving: Serve at 15–17 °C.
