Tasting profile

Structure: medium-bodied, high acidity, dry

A dry white from the Marche made entirely from Pecorino, a variety that came close to disappearing before its revival in the hills around Ascoli Piceno. Fermented and matured in stainless steel with no oak, so the fruit stays clear: yellow apple, pear and citrus peel with white blossom, a bitter-almond note on the finish and a saline thread running underneath. Medium-bodied but carried by high acidity, which gives it more grip and length than most Italian whites of its weight. The name is Pecorino spelled backwards, a nod to a wine made to overturn expectations of the grape. Best with shellfish, grilled white fish or a seafood pasta.

Serving: Serve at 9–11 °C.
