Tasting profile

Structure: full-bodied, high tannin, medium acidity, dry

St. George is one of the trio of named Coonawarra vineyard wines Lindemans have made since the 1970s — alongside Limestone Ridge and Pyrus — and the pure Cabernet of the three. The narrow strip of terra rossa over limestone that defines the region gives Cabernet its structure and its telltale eucalypt lift. Cassis and dark plum with cedar, mint, dried herb and tobacco. Full-bodied with firm, fine-grained tannin and the cool-climate acidity that carries these wines two decades. Classical rather than showy.
