Tasting profile

Structure: full-bodied, medium tannin, medium acidity, dry

Jen Pfeiffer's Cabernet, drawn from several Victorian vineyards including her family's site in Rutherglen. Victoria runs cooler than neighbouring South Australia and the wine shows it — ripe raspberry and blackberry rather than sheer density, with a varietal streak of graphite and a herb-garden lift of mint and anise running underneath. Full-bodied and generously oaked but smooth-edged, with rounded tannins and enough acidity to keep it lively. Made to be poured and enjoyed rather than waited on.
