Riesling from the Barossa — which sounds unlikely until you know the fruit comes from the valley's cooler, higher pockets rather than the warm floor where Shiraz grows. Lime and green apple with white flowers and a chalky, mineral finish, bone dry with the piercing acidity that makes Australian Riesling so long-lived. Austere and citrus-driven young, and after seven or eight years it develops the toasty, honeyed, faintly kerosene character that is the whole reason to keep it.
