Tasting profile

Structure: light-bodied, low tannin, high acidity, dry

Gadais's top Muscadet cuvée, from old Melon de Bourgogne vines on the rocky hilltop sites around the Sèvre et Maine windmills. It is fermented cool and kept on its fine lees for several months without oak, the classic sur lie method. The wine is bone dry and taut, with lemon and lime, green melon and a stony, saline core. The lees give it a light bready texture. Its bright acidity makes it a natural partner for oysters and shellfish, and the extra concentration lets it hold longer than basic Muscadet.
