Tasting profile

Structure: medium-bodied, high acidity, dry

Domaine Naturaliste's middle-tier Chardonnay, from a sustainably farmed vineyard in the cooler south of Margaret River, made by Bruce Dukes. It is fermented and aged ten months in French barriques (about a third new) with lees stirring and only partial malolactic, so oak stays in the background. Expect white peach, nectarine and grapefruit over a chalky, mineral line, a little cashew and flint, and a saline, tightly drawn finish. It is precise and fresh rather than buttery.
