Tasting profile

Structure: medium-bodied, medium tannin, high acidity, dry

Clos de la Servoisine is Domaine Joblot's best-known premier cru in Givry, and the Joblot family — Jean-Marc and now his daughter Juliette — are the reason the appellation is taken seriously at all. The style is deliberately dark-fruited and polished for the Côte Chalonnaise: black cherry and raspberry with violets and sweet spice from a good share of new oak, over the stony, faintly earthy base the limestone slope gives. Riper and rounder than the village wines around it, with real tannin underneath, and it needs a few years for the wood to settle in.
