The Clos de la Mouchère is Henri Boillot's monopole within the premier cru Les Perrières at Puligny-Montrachet, and it is the domaine's signature white — a walled parcel on the stony upper slope that gives the tension Perrières is known for. Boillot ferments in barrel with a modest proportion of new oak and blocks malolactic in most years, which keeps the wine linear and mineral rather than creamy. Expect white peach and lemon over hazelnut, acacia and a crushed-shell salinity, full-bodied but taut, with a long chalky finish. Reserved on release and at its best after a decade.
