La...deuse — the name is a pun on Mondeuse, Savoie's great red grape, from which this is made entirely. Gilles Berlioz and Christine work the Bordiot lieu-dit at Chignin on limono-calcareous soil, ploughing by horse, biodynamic and Demeter-certified, fermenting on native yeasts at low temperature with minimal sulphur and bottling by the lunar cycle. Blueberry and elderberry over peony, white pepper and strong spice, with a smoky, faintly reductive edge on opening. Light in alcohol, high in acid, fine-tanned and remarkably digestible.
