A sweet Chenin Blanc from the Chaume premier cru of the Coteaux du Layon, made by Domaine du Petit Métris, which the Renou family has farmed in Saint-Aubin-de-Luigné since the 18th century and now works organically. The grapes are picked late, in successive passes, for concentrated, often noble-rot-touched fruit. Expect quince, apricot and persimmon with honeyed richness, kept lively by Chenin's natural acidity. Serve at 8–10 °C as an aperitif, with foie gras or blue cheese, or with fruit-based desserts. Sweet Chaume ages for decades, gaining dried-fruit and spice notes.
