A biodynamic Muscadet from Domaine de l'Ecu, the estate that did more than any other to prove the Nantais could make serious, terroir-driven white. Melon de Bourgogne fermented without added yeast and raised on its lees, giving green apple and citrus over a saline, stony core and a faint bready weight. Medium-bodied with the piercing acidity the grape always has and a length most Muscadet never reaches. Bottled with minimal sulphur, so storage matters more than usual.
