Tasting profile
Structure: medium-bodied, low tannin, high acidity, dry
A lieu-dit cuvée from Claude Riffault at Sury-en-Vaux, in the northern reaches of Sancerre. The name is the clue to the site: Chailloux derives from caillottes, the shallow, stony Kimmeridgian limestone soils that warm quickly and drain hard. That is a different terroir from the domaine's silex bottlings — Les Denisottes and Les Chasseignes — and it gives a different wine. Caillottes tend to produce the more open, citrus-and-floral side of Sancerre rather than the smoky, gunflint register silex is known for. Expect grapefruit and white peach with elderflower, green herbs and a fine chalky, saline minerality, medium-bodied with racy acidity and a clean, dry, persistent finish. Precise and lifted rather than reductive. Serve cold but not iced, and it is worth a proper glass.
