Tasting profile

Structure: medium-bodied, low tannin, high acidity, dry

Muscadet Sèvre et Maine sur lie — Melon de Bourgogne from the Atlantic edge of the Loire, and "sur lie" is the part that matters: the wine stays on its spent yeast until bottling, which adds texture, a faint spritz and a bready depth to what would otherwise be a very lean white. Green apple and lemon with a saline, almost oyster-shell minerality and a light creamy weight underneath. Bone dry, high in acidity, low in alcohol. The classic shellfish wine, and cheap enough that people underestimate how good it is.
