Domaine Chandon was established in 1973 as Moët & Chandon's California venture, the first serious investment by a Champagne house in the New World, and it did much to establish that traditional-method sparkling wine could be made well outside France. The base is in Yountville, with fruit drawn largely from the cool Carneros district where fog off San Pablo Bay keeps Chardonnay and Pinot Noir fresh. Made by the traditional method with second fermentation in bottle. Expect green apple and pear with citrus, a touch of strawberry from the Pinot, a fine persistent bead and a bready, faintly nutty depth from lees ageing. Riper and rounder than Champagne of equivalent style, as California generally is, while keeping a firm acid line.
