Tasting profile
Structure: medium-bodied, low tannin, high acidity, dry
A topped-up (ouillé) Arbois Chardonnay from Renaud Bruyère and Adeline Houillon in Pupillin, from a small clay-limestone parcel farmed biodynamically, hand-harvested, and made without added sulphur or filtration. Taut and mineral rather than oxidative: lemon, green apple, flint and a salty, sea-spray edge, with some hay as it opens. Because no sulphur is added, bottles can vary; store cool and serve not too cold.
