Tasting profile

Structure: medium-bodied, high acidity, dry

Athénaïs is the négociant label of Athénaïs de Béru of the biodynamic Château de Béru, near Chablis. This Bourgogne Aligoté comes from Saint-Bris plots at 210 to 250 metres on Kimmeridgian clay-limestone, is fermented with native yeasts and raised for 12 to 18 months in vats and old oak, and bottled unfined and unfiltered. A taut, chalky Aligoté with citrus, green apple and a saline edge. Not to be confused with her skin-contact "Macération" Aligoté.
