Tasting profile

Structure: light-bodied, low tannin, high acidity, dry

Albert Bichot's Bourgogne Hautes-Côtes de Beaune is a Pinot Noir from the clay-limestone plateau behind the Côte de Beaune, at 350 to 450 metres, where the cooler air keeps the fruit fresh. It ferments for about three weeks in temperature-controlled steel, then ages 10 to 12 months mostly in vat, with only 15 to 25% in oak barrels. The result is fresh and fruit-led: red cherry, strawberry and a touch of blackcurrant, soft and delicately structured, with bright Burgundian acidity. An easy regional red Burgundy made for its first few years, best served slightly cool at 14 to 15°C.

Serving: Serve at 13–15 °C.
