Vaccarèse

**Vaccarèse** is a red grape of the southern Rhône Valley in France, counted among the traditional varieties permitted in Châteauneuf-du-Pape. Also known locally as Brun Argenté, it is a rare grape used almost entirely in small blending amounts. **In the glass** — it tends to give lightly coloured, fresh wine with modest tannin, bright acidity and a peppery, herbal, red-fruited character that adds lift and savour to a blend. **Where it grows** — its home is the southern Rhône around Châteauneuf-du-Pape, where only a few producers still cultivate it as part of the appellation's classic mix of grapes. **At the table** — within a Rhône blend it complements grilled lamb, game and herb-driven Mediterranean cooking. **Cellaring** — a minor blending component rather than a stand-alone wine; its longevity depends on the blend it joins.
