**Nerello Cappuccio** is a red grape from Sicily, grown chiefly on the volcanic slopes of Mount Etna, where it plays a supporting role alongside the more celebrated Nerello Mascalese. **In the glass** — It tends to give softer, rounder wines with a deep, almost inky colour, ripe red-berry fruit and gentle, supple tannins, adding flesh and colour where its partner brings structure and perfume. **Where it grows** — Almost all of it is planted on Etna, where it is usually blended into Etna Rosso rather than bottled alone. A little is found elsewhere in Sicily, but its identity is bound to the mountain's dark volcanic soils. **At the table** — Good with grilled lamb, roasted vegetables or a tomato-rich pasta. **Cellaring** — Drinkable young for its fruit, though in serious Etna blends it can age gracefully over several years.
