Eiswein is made from grapes left hanging into winter and picked frozen, at minus seven degrees or colder — the water in the berry stays as ice in the press, so only concentrated juice runs off. It is nothing like a botrytis wine: there is no noble rot, so the fruit stays pure and piercingly fresh rather than turning to marmalade and saffron. Silvaner is an unusual choice here, Riesling being the German default, but Rheinhessen is Silvaner's heartland and the variety brings a rounder, more herbal, less citrus-driven character. Expect ripe pear, quince and honeyed apple with a savoury herbal edge, intensely sweet and syrupy in texture but held taut by racing acidity. Made in tiny volumes and usually half-bottles, since a hard enough freeze cannot be relied on.
