Red Bordeaux at the regional level — the broad appellation covering the whole Gironde, and the everyday face of the world's most famous wine region. Merlot led with the two Cabernets, in the usual proportions. Red plum and black cherry with cedar, a leafy tobacco edge and a light earthy savour, medium-bodied with approachable tannin and balanced acidity. Claret in its plainest and most useful form: made for the table within a few years of the vintage rather than for the cellar, and considerably better with food than without. Roast beef, a lamb chop, a stew, a piece of hard cheese. Serve it at cellar temperature rather than warm.
