Bourgogne Aligoté

Tasting profile

Structure: light-bodied, low tannin, high acidity, dry

Bourgogne Aligoté is Burgundy's other white — the grape that was pushed off the good slopes by Chardonnay and has spent the last decade being taken seriously again, as growers work older plantings and stop treating it as the base for kir. Expect a light, high-acid, unshowy wine: green apple and lemon over white flowers, crushed stone and a faintly bitter almond finish, usually raised in tank or old wood so nothing gets in the way. Best served properly cold and drunk young, and it is one of the great cheap partners for shellfish and anything with garlic.

Serving: Serve at 8–10 °C.
